Ibores is a zesty, warm-flavored goat milk cheese from the rugged province of Extremadura in Spain.

Swiss Raclette is pasteurized and is typically served with white wine, such as the traditional Savoy wine or Fendant but Riesling and Pinot gris are also a great choice.

Roquefort has a velvety white paste with blue-green marbling throughout. The superior milk comes from the Lacaune ewes that graze in the high altitude Causses plateaus.
