Ubriaco di Raboso
Ubriaco Di Raboso, a cow's milk cheese from the Treviso region of Italy. This is a semi-hard raw cow’s milk cheese that is aged for six months and then immersed in Raboso grape must (skins) for weeks to develop its flavor and aroma and color. It’s much like the Ubriaco Prosecco that is aged in Prosecco grape skins, this cheese has a light reddish color and fruity taste with a spicy finish. Pair it with your favorite Merlot or Cabernet Sauvignon and an India Pale Ale.
