Duckett's Caerphilly is a raw cow’s milk cheese soured by adding a traditional pint starter. The cheese is briefly pressed, salted, pressed again, then brined before maturing. Its rind is a textured brown with a lovely creamy layer underneath and a crumbly lactic center. Its flavor is salty and moist with a lemony tang and hints of raw mushroom.
Each cheese comes with a fromager note (describing the cheese with beverage pairing suggestions) and a cheese serving tag identifying its name, origin and milk type.
