Brillat-Savarin: A triple-cream cow’s milk cheese, Brillat-Savarin is a luscious buttery cheese often called a cheese lover’s “ice cream”.
Comté – A firm pressed cheese made from the raw milk of red and white Montbeliard cows in the Jura Mountains of France in Franche-Comté.
Valençay: A classic raw milk mold-ripened chèvres distinctly identified by its pyramid form blanketed by an ash mold with a lemony and clean flavor.
