Parmigiano Reggiano Vacche Rosse
Pronounced par-mee-jee-AH-noh reh-jee-AH-noh VAH-kay ROW-say
Made from the milk of the rare Red Cows -- Vacche Rosse is higher in protein and butterfat and is aged longer (no less than 24 and up to 60 months) than regular Parmigiano Reggiano (aged 12 months). The result is a cheese that, despite the long aging, has an exceptionally rich and creamy milk taste, a finely granular texture, and a rich aroma of melted butter, fermented grass and straw.
Each cheese comes with a fromager note (describing the cheese with beverage pairing suggestions) and a cheese serving tag identifying its name, origin and milk type.
