Je T’aime is a new heart-shaped from New York's Hudson Valley. A top layer of sheep and goat milk is separated from the bottom layer of unfiltered cow’s milk with a thin line of vegetable ash. The result--a satiny paste with notes of citrus, grass, and sweet cream. Definitely a cheese to "love."
