Vacherin Mont d'Or

Vacherin Mont d'Or is a winter rarity. Packaged in a spruce cheese box to prevent the cheese from cracking, Vacherin Mont d'Or has an aromatic and softly undulating rind dusted with white molds with streaks of orange that encase a sweet, runny, and altogether magical cheese.  As this cheese ripens in its box, it develops a unique aroma with suggestions of cedar. The cheese is surprisingly mild and has only the slightest hint of mushrooms.  Pair Vacherin Mont d'Or with a strong Alsatian white wine.  Each piece weighs approximately one pound.
