Chaource
Pronounced Shah-OORS
Produced since the 14th century, when farmers sold it as an accompaniment to Champagne, Chaource is a soft, mild cylindrical raw cow's milk cheese with a velvety, white and sometimes thick, bloomy rind yielding to an interior paste with a delicate, slightly fruity flavor with hints of butter and mushrooms. One piece weighs approximately 6-8 ounces.
