The Artisanal CheeseClock® is the perfect starting point to explore the world of cheese and wine pairings. It is divided into four flavor quadrants: Mild, Medium, Bold and Strong. To create a perfect plate, simply choose a cheese from each of the four quadrants and compose the plate according to the chart. The CheeseClock® is also perfect for beverage pairings, with each quadrant lending itself to certain wines, beers, and spirits.
After you've tried a young, creme, or bloomy rind cheese from the previous 6-9 o'clock Mild quadrant, the next cheese on your plate should be from the 9-12 o'clock Medium quadrant. These cheeses are soft to semi-firm, like a mild cow, an aged goat or a sheep milk cheese. Be sure to alternate milks and textures to create a contrast between cheeses around your plate.
Pair these cheeses with Light Red Wine, Rosé, Lagers, and Pilsner Beers.
Once you've finished selecting from this quadrant move onto a stronger, bolder, or stinkier cheese from the 12-3 o'clock Bold quadrant.
