Grand Cru Surchoix
Grand Cru Surchoix is an Alpine-style, washed-rind, raw cow's milk cheese. Handmade in small batches in Wisconsin its recipe is similar to that of the Swiss Le Gruyère. The name "Surchoix" means that this batch of cheese is a cut above the rest. While original wheels are aged 4 months and reserve wheels are aged for at least 6 months, Surchoix wheels are aged for at least 9 months, resulting in this luscious cheese with a creamy paste and crunchy crystals. Its flavor is buttery with a meaty richness and an extraordinary nutty, mushroomy flavor. Award-winning in both US and international competitions, Grand Cru Surchoix is superb when paired with a zinfandel or jammy red.
