Vacherin Fribourgeois is a semi-soft Swiss cheese made with raw cow’s milk in the Jura Mountains on the border of France. A slightly pungent washed-rind does not diminish the nutty, buttery tones of this versatile cheese. Perfect for fondues, but excellent on its own, especially with a bold red burgundy or Bourdeaux.
