Cabrales is a creamy, Spanish blue cheese made with cow, sheep and goat's milk exclusively from herds raised in a small zone in the mountains of Asturias, Spain. Having a slightly granular, crumbly texture it possesses a strong spicy flavor with a higher proportion of blue veining. A bold cabernet sauvignon is in order here.
